I love these tiny cabbages that I have only seen in supermarkets in South Africa. Baby cabbages are not sold in the States, only the regular sizes. The leaves are so tender and sweet. Stuffed, they are a perfect side for your next braii (BBQ). They can be prepared and assembled in advance and tossed on the braii when needed. They are pretty versatile so you can get creative and add whatever you like. I used what we had on hand. I would have added chopped red bell pepper if we had had some. They came out delicious!
Braii’d Baby Stuffed Cabbages
4 Baby Cabbages
3 Slices Streaky Bacon, diced
1/2 Cup Onion, chopped
1/4 Cup Fresh Corn Kernels
2 Tablespoons Pine Nuts
Carefully cut out core. Then cut cabbage in half. Gently remove the middle section of each half so you have a nice little pocket for the stuffing. Now chop the little cabbage buds. Set aside.
Cut corn kernels of cob. Set aside.
Chop onion. Set aside.
Cut bacon horizontally then into a small dice. Set side.
Cut sausage horizontally then into a small dice. Set side.
To a hot sauté pan, add bacon and sausage. Sauté until bacon and sausage start to brown. Then add onion, chopped cabbage and corn. Continue to sauté until cabbage leaves are wilted. Remove from heat.
Season with salt and pepper to taste.
Place a cabbage half on a piece of foil – large enough to wrap the cabbage. Place one eighth of the filling inside the crevice. Top with pine nuts.
Wrap the cabbage half in foil and place the parcel on the braii. They cook quick so stay close and check often.
